- 150 g sucre glace
- 50 g sucre en poudre
- 5 blancs d’oeufs
- Croustillant praliné : 100g de gavottes

- Ganache au chocolat: 50g de lait, 200g de chocolat noir
- 250 g crème liquide à 30% de matière grasse minimum

- Placer un ruban rhodroid à l’intérieur de votre moule avant de monter le gâteau.
- Découper le biscuit à la mesure de votre moule et le déposer au fond.
- Répartir le croustillant praliné sur la dacquoise et réserver 30 mn au réfrigérateur.
- Ganache au chocolat : Faites tiédir le lait et faites fondre le chocolat au bain marie et verser le lait dessus tout en remuant.
- Monter la crème bien froide en chantilly. Incorporer un peu de chantilly au chocolat fondu en remuant délicatement, enfin le reste de chantilly.
- Verser la ganache sur le croustillant, lisser à l’aide d’une spatule et réserver au réfrigérateur (une nuit idéalement)
- Au moment de servir saupoudrer de cacao non sucré et décercler.
- J’ai décoré avec des crêpes dentelles émiettées.
